Baked Apples with Honey, Raisins, and Pine Nuts
This is very simple and healthy dish
perfect for Rosh HaShannah and the fall. You can make it over
the top by adding a scoop of vanilla ice cream on top.
Ingredients:
Select 6 medium size, firm apples such as Braeburn or Golden Delicious.
In truth, you can use almost any apples you have on hand, but
some apples lend themselves better to baking.
6 Apples, Cored but not peeled
1 Cup of raisins
_ Cup Pine Nuts
_ Cup of Brown Sugar
_ Cup of Honey
_ Cup Butter or Margarine, plus 1 extra Tablespoon
1 Teaspoon, Freshly Ground Cinnamon
- Preheat
oven to 380 degrees.
- Scoop out stem and seeds but leave
the bottom intact so as to create a “bowl” or a “cup”.
- In a 9x 13 baking pan arrange the
apples.
- Combine brown sugar, butter (save
the extra tablespoon for later), and cinnamon and divide equally
among the apples, placing the mixture in their cavities and outside
the apples.
- Bake apples for a total of 1 hour
to 1 _ hour, basting them with their own juices every 15 minutes
or so. You will know they are done when they are fork tender.
- In a
small pan on a low flame lightly toast the pine nuts and then
add the raisins, tablespoon of butter, and the honey.
- Toss these together for a minute
and then pour inside and over the apples.
The apples can sit out on the counter
for 4 or 5 hours and can be reheated before serving to your guests.
We often slip them into a low oven while we sit down to our entrée
and let them reheat over the next hour. Transfer them to a serving
dish and be sure to pour the remaining juices back over the apples.
